Books: My preference is to read CRM books online through Safari Books Online and Books24x7. These services allow you to search the contents of books to find what you need a lot faster. But when you're first starting out with CRM it makes sense to start with a book that provides an overview of most major features and go through it while using the product.
Classroom: Many Microsoft partners offer classroom-based training for Dynamics CRM
The best way to learn Dynamics CRM is to install it (or subscribe online) and go through the product along with one or more books, videos or other training materials. Ideally, you'll install it with major product roles on separate servers and add Exchange and SharePoint to the mix (SQL Reporting Services is already a requirement). But you can still learn most of the product's features and functions with Dynamics CRM Online or by installing all roles to a single server or a VM (Hyper-V or VirtualBox).
